Real Kefir Real kefir, also known as The Queen of Milks or The Champagne of Milks, is a probiotic and nutrient rich drink that provides vital support to gut and general health. It is tangy, white and creamy like yogurt but is more liquid than yogurt so that you can drink it. Kefir can be drunk as it is, made into all kinds of smoothies, transformed into healthy raw cheeses, or used in baking as you would buttermilk. Furthermore, real kefir is incredibly easy to make in your own kitchen. Real kefir is not to be confused with the kefir drink sold in health food stores or the cultured kefir sold through various health food sites. Real kefir is made from things called "grains" that are such a complex organization of bacteria and yeasts that they still are not fully understood. The kefir they produce, after sitting in milk for 24 hours, is offers full "kefir nutrition and probiotics" and is far superior to any sweetened, cultured variants. One of the wondrous things about making real kefir in your own kitchen is that grains of good quality and under good conditions grow rapidly. You never run out. As a matter of fact, not only do the grains continue to feed you and your family, in short order you will have enough grains to share. All they need is time, daily fresh milk, and a sheltered spot.

He shares pages and pages and pages of detailed and interesting information covering all aspects of anything to do with kefir. History, microbiology, directions and photos for making kefir are all included. Dom rightly emphasizes making real kefir from kefir grains and encourages people to share their excess grains and not subject them to the profit motive. As an added bonus,. this information rich site is laced with humor and an artistic sensibility. Dom's Kefir-cheese in-site - Everything about the above site applies here except that this site is dedicated to teaching how to make various cheeses from kefir. In other words, you can make unprocessed, cultured milk into cheeses full of flavor, living enzymes and probiotics. Kefir.net - "the ancient antidote to modern maladies". This modest site has good information about the benefits of kefir without being overwhelming.. It is associated with Donna Gates' Body Ecology Diet which we don't know about firsthand but have heard good things about. Our only hesitation about this site is that it pushes/sells packets of kefir starter rather than encourage finding kefir grains.
